The creation of our wine list at Sails has been an evolutionary process; as the Restaurant changed and grew, so did our wine collection.

The wine list has been developed with two very important factors in mind, first and foremost to guarantee the best provenance for our wines and secondly to provide an extensive choice for our customers. 

Over the past twelve years we have catalogued more than 500 wines into our collection. We care about longevity, storage history and the ownership of each wine and prefer to purchase wines immediately upon release and cellar them until they are ready to be enjoyed.

Among our collection is a large selection of fine Australian wines, including Penfolds, Henschke, Giaconda, Mount Mary and a several vintages of Domaine Romanee Conti.
