Sails Restaurant has three climate controlled cellars. Each cellar has been built to suit the wine style.

Our Chardonnay Cellar is situated underneath the Restaurant and was the original home to our entire wine list when it was first built in 1996.

On the Restaurant level our Aromatic Cellar is located and houses only light style whites. These are younger wines that are intended for drinking in the first few years of their life-span.

Located at basement level is our wine bar, Rumba. It is our largest working cellar and stores all of our red wines and vintage champagnes.

To ensure impeccable provenance, our cellars are maintained at an ideal environment where wines are kept on average at 16˚ Celsius and 65% humidity.

Featured are some vintage runs from producers who consistently reach a high level of quality in variety and style.

The wines are chosen by our Sommelier and range from well known Australian, European and New Zealand brands through to small boutique wineries from all over the world.
